做(zuò )法:洗净(jìng )宰好鲫鱼(yú ),洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一(yī )小块姜,热(rè )锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武(wǔ )火煮沸,转中小(xiǎo )火煲一个半(bàn )小(xiǎo )时,下盐(yán )调味即可(kě )品尝(cháng )。 -
