做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上擦一遍,放两勺油(yóu ),待油六成(chéng )热下鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫(jì )鱼和其(qí )他材(cái )料(liào ),武火煮沸,转中小火煲一个(gè )半小时,下盐调(diào )味即可品尝。 -
