做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮(pí )泡软,拍裂一小块姜,热(rè )锅,用姜块在(zài )锅上擦一(yī )遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎(jiān )至(zhì )微(wēi )黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐调味(wèi )即可品尝(cháng )。 -
